Pork Carnitas Quesadillas
Slow Cooker Total Time: 4 hours on high or 8 hours on low
Serve with Dakota’s Pride Black Beans and Rice Bowl Spanish Rice.
Ingredients:
- 4-5 lb. Roseland Half Pork Loin
- 1.25 oz. Casa Mamita Taco Mix
- 2 cups red onion – sliced
- 2 cloves garlic – chopped
- 12 oz. Casa Mamita Medium Salsa
- 32 oz. Chef’s Cupboard Chicken broth
- 12 oz. Tuscan Garden Jalapeño Slices (optional)
- 1 package Benita Flour Tortillas
- 1 cup Benita Shredded Quesadilla Cheese*
- 1/2 cup Friendly Farms Sour Cream
Directions:
- Cut pork loin into three segments and place in slow cooker.
- Add red onion, garlic, salsa, taco mix and chicken broth (add jalapeños for spiciness).
- Cook for 4 hours on high or 8 hours on low.
- Pork is done when it shreds easily. Shred pork.
- Heat up the Crofton Quesadilla Maker.
- Add Benita Flour Tortilla, pork, then cheese and cook according to manufacturer’s instructions. Top with sour cream and cheese before serving.
