Pork Carnitas Quesadillas


Slow Cooker Total Time:  4 hours on high or 8 hours on low

Serve with Dakota’s Pride Black Beans and Rice Bowl Spanish Rice.

Ingredients:

  • 4-5 lb. Roseland Half Pork Loin
  • 1.25 oz. Casa Mamita Taco Mix
  • 2 cups red onion – sliced
  • 2 cloves garlic – chopped
  • 12 oz. Casa Mamita Medium Salsa
  • 32 oz. Chef’s Cupboard Chicken broth 
  • 12 oz. Tuscan Garden Jalapeño Slices (optional)
  • 1 package Benita Flour Tortillas
  • 1 cup Benita Shredded Quesadilla Cheese*
  • 1/2 cup Friendly Farms Sour Cream

Directions:

  1. Cut pork loin into three segments and place in slow cooker.
  2. Add red onion, garlic, salsa, taco mix and chicken broth (add jalapeños for spiciness).
  3. Cook for 4 hours on high or 8 hours on low.
  4. Pork is done when it shreds easily. Shred pork.
  5. Heat up the Crofton Quesadilla Maker.
  6. Add Benita Flour Tortilla, pork, then cheese and cook according to manufacturer’s instructions. Top with sour cream and cheese before serving.
