Taffy Apple Cones


Prep time: 30 minutes (plus 9 hours to chill)
Cook time: 15 minutes
Total time: 45 minutes (plus 9 hours to chill)
Yields: 15 cones

Creamy, crunchy and satisfying, presented to look like an indulgent ice cream cone!

Ingredients:

  • 20 ounces Sweet Harvest Crushed Pineapple
  • 2 cups Baker's Corner Mini Marshmallows
  • 1 large Goldhen Egg, beaten
  • ½ cup Baker's Corner Granulated Sugar
  • 1 tablespoon Baker's Corner All Purpose Flour
  • 1 ½ tablespoons Tuscan Garden White Vinegar
  • 1 ½ cups Southern Grove Dry Roasted Unsalted Peanuts
  • 3 cups diced Fuji apples
  • 8 ounces Friendly Farms Whipped Topping, thawed
  • 15 Benton's Ice Cream Cups or Waffle Bowls*
  • 5 tablespoons Berryhill Caramel Ice Cream Topping*
  • 10 ounces Baker's Corner Maraschino Cherries

Directions:

  1. Drain pineapple and reserve juice. Combine drained pineapple with marshmallows and refrigerate.   
  2. In a saucepan, combine reserved pineapple juice, egg, sugar, flour and vinegar. Cook over medium heat until thickened, stirring frequently. Refrigerate mixture 8 hours or overnight.
  3. In a large bowl, combine marshmallow mixture, cooked mixture, peanuts, apples and whipped topping. Refrigerate for at least one hour.
  4. To assemble: Use an ice cream scoop to place equal portions of taffy apple salad on top of each cone or into waffle bowls. Drizzle each portion with 1 teaspoon of caramel topping and top each with a maraschino cherry.
