Black Friday Savory Breakfast Muffins
Turkey cheddar muffins lightly sweetened with honey and cranberry sauce.
- Preheat oven to 400°.
- In a medium bowl, whisk together eggs, milk, butter, honey, salt and poultry seasoning.
- Whisk in baking mix until combined. Fold in turkey and 1/2 cup of cheese. Fold in cranberry sauce until swirled, but not thoroughly mixed.
- Line a muffin tin with paper liners. Fill each cup 2/3 full of batter.
- Bake on a center rack for 8 minutes. Remove from oven and top each muffin evenly with remaining 1/2 cup cheese. Return to oven and bake for an additional 6-8 minutes or until a toothpick inserted comes out clean.
TIP: No leftover turkey? Turkey deli meat can be substituted.
