Gluten Free Ricotta Fruit Breakfast Wraps

Jump to Recipe

Start your morning off with a well-balanced breakfast by following this Gluten-Free Ricotta Fruit Breakfast Wrap recipe! This sweet snack can be made in a few easy steps, and it’s the perfect morning pick-me-up.

Begin by adding cooking spray to a large skillet on medium heat. Next, add a gluten-free wrap, or your wrap of choice, and heat until warm. To keep your wrap warm, place it over tin foil while assembling your fruit-filled treat.

Spread a layer of creamy ricotta cheese—or cottage cheese—over your wrap as the base. Then, add 2 tablespoons of raspberry or blackberry fruit spread over the ricotta. The combination of fresh ricotta and tart, fruity marmalade balances each other out to create a smooth, sweet flavor.

To add texture, flavor, and crunch, top your morning meal with 2 tablespoons of almonds and semi-sweet chocolate mini morsels. For an extra hint of sweetness, add fresh raspberries and drizzle honey over the top before folding up your wrap!

To achieve the perfect fold, wrap two sides over the filling and roll tightly until both ends of the wrap are facing side down. Bundle your delicious breakfast wrap in foil, cut in half and pair with a cup of coffee. Whether you’re on the go or want to make an easy breakfast at home, this recipe is made for you.

  1. In a large skillet over medium heat, heat the wraps on each side for 30 seconds until warm. Lay each wrap on a sheet of foil.
  2. Spread each wrap with 1/4 cup ricotta leaving a 1 to 2-inch border followed by 2 tablespoons fruit spread. Layer with 2 tablespoons almonds and 2 tablespoons mini morsels.
  3. To assemble each wrap; fold two sides of wrap over filling, then roll tightly, ending seam side down. Wrap with foil. Cut in half and serve.

Tip: To make ahead, freeze overnight or up to one month. Remove from freezer 20 minutes prior to eating.
