Coconut Oil Avocado-Banana Bread

To start, preheat your oven to 350°F and coat an 8-inch loaf pan with canola cooking spray. While the oven is preheating, mash up your bananas and avocado until the mixture is nice and smooth.
Mix together the organic coconut oil with the granulated sugar. Next, add a large egg and pure vanilla and stir it all together. Next, mix together the all-purpose flour, baking powder and baking soda.
Add the banana-avocado mixture to the batter and stir. The mixture will be smooth and creamy, with just the right amount of sweetness. Pour the batter into your prepared pan and bake for 1 hour. The bread should be golden brown on the outside and moist on the inside.
Add in some walnuts, chocolate chips or shredded coconut for more texture and flavor. This bread is perfect for a morning treat or an afternoon snack. You can even serve it as a healthier dessert option.
