Cauliflower "Rice" with Caramelized Onions and Roasted Garlic


  1. In a food processor, pulse cauliflower until it resembles course crumbs. Place cauliflower in a kitchen towel and squeeze out any excess liquid. Reserve.
  2. Coat a medium skillet with cooking spray and place over medium-high heat. Add cauliflower, garlic, onions and 2 tablespoons parsley. Mix until ingredients are well combined. Season to taste with salt and pepper.
  3. Cook cauliflower for 10 minutes. Garnish with remaining 2 tablespoons parsley.
