Salmon Croquettes with a Sweet Horseradish Dipping Sauce
- In a food processor, combine salmon, goat cheese, breadcrumbs, garlic, onion, vinegar, egg, salt, pepper, ginger, oregano, garlic powder, onion powder and 2 tablespoons parsley. Process until combined but still chunky. Fold pickles and lime zest into mixture until incorporated. Reserve.
- Using your hands, roll mixture into 12 golf ball-sized balls. Form into football shape and reserve.
- In a large skillet over medium-high heat, add oil. Cook croquettes on each side for 5 minutes or until golden brown and cooked through.
- Meanwhile, in a small bowl, combine mayonnaise, sour cream, horseradish, honey, lime juice and remaining ¼ cup parsley. Stir until combined. Serve alongside croquettes.
