Lunch Box Granola Bars
- In a small pan over medium heat, melt honey, almond butter and coconut oil. Stir until combined. Allow to cool slightly.
- In a food processor, process dates into small chunks. Add to pan with honey mixture. Stir until well combined.
- Empty the mixture into a medium bowl. Add the flax, oats and walnuts; mix until thoroughly coated.
- Line a 11x7-inch baking sheet with parchment or plastic wrap. Press the mixture firmly into the pan. Allow to chill for 1 hour in the refrigerator. Cut into bars. Wrap with plastic wrap.
TIP: These can be frozen for up to 2 months. Just take one out of the freezer and stick it into a lunch box. By lunch time, it will be defrosted and chewy again!
