Baked Veggie Tortilla Triangles

Directions:

  1. Preheat oven to 400°.
  2. In a medium bowl, mix together the vegetables, cream cheese, salt and pepper.
  3. Lay the tortillas onto a flat surface and place 1 ½ tablespoons of the vegetable mixture at one corner of the tortilla.
  4. Fold the tortilla into quarters, forming a triangle. Place open flap side down onto a baking pan.
  5. Brush each tortilla triangle with oil, bake on a parchment-lined sheet pan for 10 minutes or until crispy.
  6. Allow to cool. Wrap, refrigerate and send off to lunch.

1 cup zucchini, sliced into matchsticks

1 ½ cups total of a mix of red, orange and yellow bell peppers, thinly sliced

½ cup shredded carrots

½ cup sliced broccoli

8 ounces Happy Farms Cream Cheese, softened

½ teaspoon Stonemill Essentials Iodized Salt

½ teaspoon Stonemill Essentials Ground Black Pepper

15 Benita Fajita Tortillas, cut in half

¼ cup Carlini Extra Virgin
Olive Oil
