Mediterranean Layer Dip

Try this layered dip instead of the usual Mexican version for your next party.

Directions:

  1. Spread hummus evenly, covering the bottom of a pie plate or similar serving dish.
  2. In a medium bowl, combine tomato, cucumber, onion and olives. Season to taste with salt and pepper. Top hummus with vegetable mixture. Sprinkle with feta cheese.
  3. Drizzle generously with olive oil. Arrange pita chips around edges of plate or serve on the side.

Ingredients:

2 8-ounce Little Salad Bar Original or Roasted Garlic Hummus

½ cup diced tomato

½ cup diced cucumber

3 tablespoons minced red onion

½ cup Tuscan Garden Large Pitted Ripe Black Olives, coarsely chopped

Stonemill Essentials Iodized Salt, to taste

Stonemill Essentials Ground Black Pepper, to taste

¼ cup Specially Selected Feta Cheese Crumbles

2-3 tablespoons Carlini Extra Virgin Olive Oil

9 ounces Clancy's Sea Salt or Parmesan Garlic Pita Chips
