Fresco Cheese Crostini with Pumpkin Mojo
A sweet and savory bite that’s topped with a spice infused pumpkin sauce.
- Preheat oven to 400°. In a large bowl, combine the baguette slices and 1/4 cup oil, toss until coated. Place in a single layer on a baking sheet. Bake for 6 minutes. Reserve.
- In a medium bowl, combine the chili powder, pumpkin pie spice, brown sugar, salt, pepper, pumpkin, orange zest, orange juice, lime zest and lime juice. Gradually whisk in the remaining oil. Reserve.
- Heat a nonstick skillet over medium-high heat. Sear the fresco cheese on each side until golden brown. Remove from pan, allow to cool. Slice each rectangle on a diagonal.
- Arrange the baguette slices on a serving platter. Top each with a few pieces of arugula followed by a slice of fresco cheese. Drizzle with the pumpkin mojo.
