Fresco Cheese Crostini with Pumpkin Mojo

A sweet and savory bite that’s topped with a spice infused pumpkin sauce.


  1. Preheat oven to 400°. In a large bowl, combine the baguette slices and 1/4 cup oil, toss until coated. Place in a single layer on a baking sheet. Bake for 6 minutes. Reserve.
  2. In a medium bowl, combine the chili powder, pumpkin pie spice, brown sugar, salt, pepper, pumpkin, orange zest, orange juice, lime zest and lime juice. Gradually whisk in the remaining oil. Reserve.
  3. Heat a nonstick skillet over medium-high heat. Sear the fresco cheese on each side until golden brown. Remove from pan, allow to cool. Slice each rectangle on a diagonal.
  4. Arrange the baguette slices on a serving platter. Top each with a few pieces of arugula followed by a slice of fresco cheese. Drizzle with the pumpkin mojo.
