Vegan Protein Oatmeal Bites


  1. Preheat oven to 375°.
  2. In a small bowl, combine flaxseeds and water; mix thoroughly. Let stand 5 minutes or until mixture reaches an "egg-like" consistency.
  3. Combine all ingredients in a blender, including flax "egg." Blend until smooth.
  4. Line a mini muffin tin with mini cupcake liners. Scoop 2 tablespoons batter into each lined muffin tin. Add desired add-ins. Bake until golden brown, about 15-20 minutes.
