"Bento Box" Lunch

Try this delicious bento box lunch! Packed with protein, healthy grains, and fresh produce, this meal is sure to keep you full and energized throughout the day.

Start with the sandwich roll, turkey or any lunch meat and avocado slices. Add a touch of tangy yellow mustard and crisp mini cucumber sticks for a satisfying crunch.

Next up is the quinoa salad, tossed with sweet mandarin oranges, tart dried cranberries and crunchy sliced almonds. Top it off with fresh green onions and a drizzle of olive oil, plus a sprinkle of salt and pepper to taste.

For a little bit of extra crunch and flavor, enjoy the broccoli salad, made with chopped broccoli, sliced almonds and more dried cranberries. Tossed in a tangy soy sauce and creamy vanilla nonfat Greek yogurt, this salad is a perfectly balanced mix of sweet, savory and tangy flavors.

Finally, for a sweet and spicy finish, enjoy the cinnamon apples made with sliced granny smith apples tossed in lemon juice and fragrant ground cinnamon. These apples are the perfect sweet treat to round out your lunch.

Directions:

  1. For the Sandwich Roll:  Trim crusts from bread.  Using a rolling pin, roll out slices to a 1/8-inch thickness. Top with turkey, mustard, avocado and cucumber.
  2. Roll into a cylinder.  Wrap with plastic wrap and cut in half.
  3. For the Quinoa Salad:  In a medium bowl, combine all ingredients, season to taste with salt and pepper.
  4. For the Broccoli Salad: In a medium bowl, combine all  ingredients.  Season to taste with pepper.
  5. For the Cinnamon Apples:  Toss apples with lemon juice and cinnamon.  Place in a plastic baggie and wrap tightly.
  6. Serve all components together for a healthy lunch.
