Try this tasty potato casserole from the ALDI Test Kitchen. It’s a great appetizer or main dinner entrée, packed with cheesy goodness and crispy hash browns. This casserole is sure to be a crowd-pleaser.

Start with your hash browns, which are combined with butter, salt and black pepper to create a crispy and flavorful base. To take this dish to the next level, we add a generous amount of cheddar cheese and a dollop of sour cream.

The diced white onion adds a bit of texture and flavor to this already rich and delicious casserole. Once everything is combined, simply place the mixture into a 13x9-inch baking dish, cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 30 minutes or until the top is golden and crisp.

One of the best things about this dish is that it can be easily adapted to suit your personal taste. If you prefer a spicier casserole, try adding some diced jalapeños or red pepper flakes. For a more herbaceous flavor, add some fresh or dried thyme, rosemary or parsley.

Directions:                    

  1. Preheat oven to 375º.
  2. In a large bowl, combine hash browns and melted butter. Add remaining ingredients, stir until incorporated. Place into a 13x9-inch baking dish.
  3. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for additional 30 minutes or until top is golden and crisp.

TIP: To save time in the morning, casserole can be assembled and refrigerated the night before.
