Ultimate Toad in the Hole Sandwich


  1. Place a large sauté pan over medium-high heat. Once pan is heated, apply a generous layer of cooking spray.
  2. Add sausage links and bagel, sliced side down, to heated pan. Rotate sausages every minute to brown on all sides.
  3. After 2 minutes, remove bottom half of bagel. Crack the egg into the hole of the top half, cook for 2 minutes. Meanwhile, spread mayonnaise on the bottom bagel and add spinach. Flip the egg-filled bagel and cook for 1 minute. Remove sausages and cut lengthwise.
  4. Arrange sausage on top of spinach. Add cheese and avocado. Top with egg-filled bagel.
