To begin, prepare the oatmeal batter, a base that combines the goodness of old-fashioned oats with a touch of flax seeds for added nutritional value. In a small bowl, mix flax seeds with water.

Next, gather the remaining oatmeal batter ingredients. In a blender, combine the old-fashioned oats, pure vanilla extract, organic soymilk, mashed banana, iodized salt, baking soda, baking powder, pure maple syrup, creamy almond butter and ground cinnamon. Blending these ingredients together creates a smooth and luscious batter that forms the base of our protein-packed oatmeal bites.

Now comes the fun part – the add-ins! Personalize your oatmeal bites and enhance their flavor and texture. Fresh blueberries, sliced bananas and raspberries bring bursts of fruity sweetness. Diced apples add a crisp bite, while lemon zest imparts a refreshing tang.

The oatmeal bites bake in the preheated oven until golden brown, a process that takes approximately 15-20 minutes. Once baked, let them cool slightly before enjoying their delightful taste and texture.

Directions:                   

  1. Preheat oven to 375°.
  2. In a small bowl, combine flax seeds and water; mix thoroughly. Let stand 5 minutes or until mixture reaches an "egg-like" consistency.
  3. Combine all ingredients in a blender, including flax "egg." Blend until smooth.
  4. Line a mini muffin tin with mini cupcake liners. Scoop 2 tablespoons batter into each lined muffin tin. Add desired add-ins. Bake until golden brown, about 15-20 minutes.
