Jump to Recipe

Indulge your sweet tooth and elevate your breakfast or brunch with our irresistible Cinnamon Roll Coffee Cake—a delightful fusion of classic cinnamon rolls and moist coffee cake that will delight your taste buds.

Start with a base of yellow cake mix, which provides a moist and fluffy foundation for the coffee cake. The cake mix offers a light and fluffy texture with just the right sweetness, making it the perfect base for the cinnamon roll coffee cake.

Next, prepare a decadent cinnamon-sugar filling by combining unsalted butter, sugar, brown sugar, ground cinnamon and flour. This mixture creates a fragrant and aromatic sweetness reminiscent of classic cinnamon rolls, infusing the coffee cake with irresistible flavor and richness.

Now, time for the cinnamon rolls! Use pre-made cinnamon rolls with icing for added convenience. These fluffy and tender rolls are loaded with cinnamon flavor and topped with creamy icing, adding another layer of sweetness and indulgence to the coffee cake.

To assemble the Cinnamon Roll Coffee Cake, layer the cinnamon-sugar filling between the cake batter and the cinnamon rolls, creating a delicious swirl of flavor throughout the cake. The cinnamon filling melts into the cake as it bakes, infusing it with warm and comforting aromas that will fill your kitchen with the irresistible smell of cinnamon and nutmeg.

Once they’re baked, the Cinnamon Roll Coffee Cake emerges from the oven as a decadent blend of moist cake, sweet cinnamon filling and tender cinnamon rolls, all topped with a drizzle of sweet icing. It's the perfect indulgence for breakfast or brunch, offering a delightful combination of sweetness and warmth that will satisfy your cravings and leave you craving more.

Directions:

  1. Preheat oven to 375˚. Coat a round cake pan with cooking spray.
  2. Prepare cake mix according to packaging instructions. Reserve.
  3. In a medium bowl, cream butter together with sugars and cinnamon. Add flour, mix until just combined. Mixture should be crumbly.
  4. Fold 3/4 cup of sugar mixture into cake batter.
  5. Pour 1/3 of the batter into the prepared cake pan. Unroll 3 cinnamon rolls. Starting from the edge, lay them on top of the batter, making a spiral towards the center of the cake pan. Pour another 1/3 of the batter over the cake. Repeat with 3 more cinnamon rolls, top with remaining batter.
  6. Sprinkle the remaining sugar mixture on top of the cake. Bake for 20-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Allow cake to cool for 3-5 minutes. In a microwave, heat the icing packet for 15 seconds and drizzle over the top of the cake.
