Melt Your Hearts
Rich, dark chocolate cups filled with luscious dairy-free strawberry prosecco mousse.
- In a large bowl, microwave chocolate on high for 1 minute. Remove from microwave, stir. Return bowl to microwave and heat in 30 second intervals until chocolate is completely melted.
- Using a pastry brush, coat mini cupcake liner with melted chocolate; let cool. Repeat process 2-3 times until cup reaches desired thickness. Refrigerate until ready to use.
- In a food processor, combine avocado, maple syrup, almond extract, freeze dried strawberries and prosecco. While food processor is running, slowly stream in coconut oil; puree until smooth. Add strawberry spread, mix well. Refrigerate mixture until firm, about 3 hours.
- Remove chocolate cups from refrigerator; peel away cupcake liner. Fill chocolate cups with strawberry mousse.
TIP: For an elegant touch, decorate cups with chocolate hearts. On a parchment lined baking sheet, drizzle chocolate into heart shapes. Chill until firm and place inside mousse cups.
