Coffee Brownies

If you’re a coffee lover and a chocolate lover, then these coffee brownies are the perfect treat for you! These rich, decadent brownies are infused with the flavor of freshly brewed coffee and topped with a sprinkle of coffee grounds and powdered sugar for an extra caffeine kick.

To start, you’ll need brown sugar, granulated sugar, and unsalted butter, along with brewed roasted ground coffee and grounds. The coffee grounds are used both in the brownie batter and as a garnish on top. You’ll also need chocolate morsels, large eggs, pure vanilla, baking cocoa, all-purpose flour, iodized salt and powdered sugar.

First, combine the sugars, butter, brewed coffee and coffee grounds in a pot over medium-high heat. Bring the mixture to a boil, stirring constantly, then reduce the heat and add the chocolate morsels. Stir until melted and let cool for 10 minutes.

In a large bowl, whisk the eggs until frothy, then add the vanilla and gradually whisk in the cooled chocolate mixture. In a separate large bowl, sift together the baking cocoa, flour and salt. Fold this mixture into the chocolate mixture in batches, then fold in the remaining chocolate morsels.

Line an 8x8-inch baking pan with parchment paper, leaving some overhang on the sides. Pour the batter into the pan and bake for 40 minutes, or until a toothpick inserted in the center comes out clean. Let the brownies cool to the touch before sprinkling the remaining coffee grounds and powdered sugar on top.

Directions:                    

  1. Preheat oven to 350°.
  2. In a medium pot over medium-high heat, combine sugars, butter, coffee and ¼ cup coffee grounds. Bring to a boil, stirring constantly. Decrease heat to low and add 1 cup chocolate morsels. Stir until completely melted and let cool for 10 minutes.
  3. In a large bowl, whisk eggs until frothy. Add vanilla and gradually whisk in chocolate mixture.
  4. In a separate large bowl, sift baking cocoa, flour and salt. Fold in to chocolate mixture in batches. Fold in remaining ½ cup baking morsels and mix until just incorporated.
  5. Line a 8x8-inch baking pan with parchment paper, leaving an extra few inches to overhang the sides. Pour chocolate mixture into pan and bake for 40 minutes or until a toothpick inserted in the center comes out clean. Remove pan from oven and allow brownies to cool to the touch.
  6. Combine remaining tablespoon coffee grounds and powdered sugar. Sprinkle over brownies.
