Now, it’s time to whip up the topping. Combine brown sugar, flour, oats, chopped walnuts and chilled unsalted butter to create a crumbly and golden topping that's both crunchy and buttery. Directions

  1. Preheat oven to 400°.
  2. In a cast iron saucepan, over medium heat, whisk together sugar, corn starch, salt, water, cinnamon and lemon juice. Bring to a boil, reduce and cook for 2 minutes. Remove from heat and stir in berries and thyme. Reserve.
  3. In a medium bowl, mix together brown sugar, flour, oats and walnuts. Mix in butter with fingertips to resemble coarse crumbs. Crumble over berries and bake for 20 minutes or until fruit is bubbling and top is golden brown.
  4. Serve with ice cream or whipped cream.
