Ham and Brie Sandwiches with Cranberry-Honey Mustard


  1. Preheat oven to 400°.
  2. In a medium bowl, combine all dough ingredients, except butter. Do not over mix. Divide dough into 24 equal portions, shape into balls and place in a mini muffin pan.
  3. Lightly brush melted butter onto each roll. Bake for 20 minutes. Cool for 5 minutes.
  4. While rolls are baking, whisk together cranberry sauce, honey and mustard. Set aside.
  5. Cut off white rind of brie and slice cheese into ¼-inch slices.
  6. Cut ham into slices the size of the roll.
  7. Slice rolls in half. On each bottom half, place a slice of ham and 1 teaspoon of cranberry-honey mustard. On each top, place a slice of brie. Place open-faced sandwiches on a parchment-lined cookie sheet. Bake for 5 minutes.
  8. Place tops on sandwiches, serve warm.

3 cups Baker's Corner All Purpose Flour

1 ½ teaspoons Baker's Corner Baking Soda

½ teaspoon Stonemill Essentials Iodized Salt

1 teaspoon Stonemill Essentials Garlic Powder

1 tablespoon Berryhill Honey

¾ cup Holland Lager 1839

½ cup Southern Grove Dried Cranberries, rehydrated in warm water

2 teaspoons orange zest

½ cup fresh squeezed orange juice

2 tablespoons Countryside Creamery Unsalted Butter, melted


Cranberry-Honey Mustard:

½ cup Sweet Harvest Whole Berry Cranberry Sauce*

½ cup Berryhill Honey

¼ cup Burman's Dijon Mustard

8 ounces Specialty Selected Brie Cheese Round*

¾ pound Appleton Farms Quarter Boneless Sliced Ham
