Alfredo Shrimp Casserole
- Preheat oven to 350º. In a large saucepan, bring 2 quarts water to a boil. Add macaroni and boil for 6 minutes; drain. Macaroni will only be cooked half way. While the macaroni cooks, defrost shrimp in a colander under cold water for about 5 minutes; shrimp will still be slightly frozen. Place macaroni and shrimp in a 9x13-inch pan.
- In a medium bowl, combine alfredo sauce, parsley and pepper. In a separate bowl, whisk milk into beaten eggs. Slowly whisk milk mixture into alfredo mixture. Stir in ½ cup parmesan cheese. Pour over macaroni, stir until coated.
- Spread crushed crackers evenly over the casserole. Sprinkle with the remaining parmesan cheese. Pour butter evenly over the crackers.
- Bake for 1 hour, 30 minutes or until top is golden brown and the center is set.
