Chili Con Carne
What's fall without a hearty, comforting and classic chili?!
- In a large pot, heat 1 tablespoon vegetable oil over medium-high heat. Add beef and cook until cooked through. Drain fat and reserve.
- Add remaining tablespoon of vegetable oil to pot. Add onion, red pepper, jalapenos; sauté for 5 minutes. Add garlic, chili powder, cumin, oregano and salt. Sauté for another 5 minutes. Add tomatoes, beans, broth and tomato paste. Bring chili to a boil, reduce heat to low and simmer for 1 hour and 50 minutes, or until chili thickness is reached.
- Stir in cilantro and serve with lime wedges.
Tip: If chili becomes too thick, add more broth to reach desired consistency.
