Grilled Balsamic Veggie Skewers
- Preheat grill to medium-high heat.
- Thread veggies onto metal skewer, alternating colors. Drizzle with olive oil and season with salt and pepper. Place on grill.
- Turn frequently to prevent burning. Vegetables should be al dente after 10-15 minutes. Remove from heat and drizzle with balsamic vinegar.
Tip: To make your own balsamic glaze, simmer 1 cup of balsamic vinegar in a saucepan, over medium-high heat, until reduced by half or to desired thickness.
