Blistered Mini Peppers


  1. Preheat oven to 425°.
  2. Place peppers on a sheet tray and drizzle with oil.  Season with salt and place in oven for 25 minutes or until skin is blistered; rotate after 10 minutes.
  3. Spread cheese wedges on crackers and top with peppers.
