Jump to Recipe

Impress your guests with this spicy and flavorful chicken fiesta soup recipe. Packed with rich ingredients, this dish is perfect for those looking to spice up their weeknight dinner routine.

Start by combining tender chicken breasts, cream of chicken soup, sweet whole kernel corn, diced tomatoes with green chiles and protein-rich black beans into a slow cooker. Season with iodized salt and ground black pepper to taste and stir to combine.

Let the ingredients simmer together on low heat for 6 hours, allowing the flavors to meld together and the chicken to become juicy and tender. Once finished cooking, remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker and stir it into the soup until well combined.

For a delicious and authentic Mexican flavor, add 2 teaspoons of cumin to the soup before cooking. Don't forget to serve your soup with a sprinkle of shredded cheese and a side of crispy tortilla chips. This chicken fiesta soup recipe is the perfect way to add a little excitement to your next dinner party or family meal.

Directions:

  1. Combine all ingredients into a slow cooker. Stir, set on low for 6 hours.
  2. When finished cooking, remove chicken breast and shred with two forks. Return to slow cooker and stir to combine.

TIP: For a more authentic Mexican flavor, try adding 2 teaspoons of cumin before cooking and serve with shredded cheese and tortilla chips.
