Chicken Fiesta Soup
- Combine all ingredients into a slow cooker. Stir, set on low for 6 hours.
- When finished cooking, remove chicken breast and shred with two forks. Return to slow cooker and stir to combine.
TIP: For a more authentic Mexican flavor, try adding 2 teaspoons of cumin before cooking and serve with shredded cheese and tortilla chips.
