- In a small bowl, whisk lime juice, olive oil, sugar, pepper and salt until dressing holds together.
- In a large bowl, toss peaches, cucumbers, corn kernels and onion with dressing. Arrange over spring mix.
- Garnish with lime zest, basil leaves and feta cheese.
