Colcannon with Spinach
A traditional Irish side dish of mashed potatoes and boiled cabbage with a bit o’ green to bring some luck!
- Place potatoes and 1 tablespoon of salt in a large pot, cover with cold water. Bring to a boil and cook until tender, approximately 15 minutes.
- In another large pot, combine cabbage and 1 tablespoon of salt. Add water to cover cabbage. Bring to a boil and cook until tender, approximately 15 minutes.
- Meanwhile, in a large skillet, over medium heat, melt 1 tablespoon of butter. Add garlic and sauté for 1 minute. Add spinach, 1 teaspoon salt, ½ teaspoon pepper and cook for about 4 minutes until wilted. Drain excess liquid and squeeze spinach dry. Add mixture to a food processor and blend until smooth.
- Drain the cabbage and potatoes and place in two separate bowls. Mash the potatoes with remaining 4 tablespoons of butter, heavy cream, 1 teaspoon of salt and ½ teaspoon of pepper. Stir in cabbage and spinach mixture. Serve immediately.
TIP: Don’t have a food processor? Finely chop the spinach prior to cooking.
