Brown Butter Lima Beans


  1. In a small saucepan over medium heat, melt the butter. Stir with a wooden spoon for about 4 minutes, or until it reaches a light golden brown and gives off a nutty fragrance. Remove from heat, continue to stir until cool. Reserve.  
  2. In a small skillet over high heat, brown the bacon. Remove bacon and all but 1 tablespoon of the bacon fat.
  3. Reheat the bacon fat. Add onion, sauté for 1 minute. Add the corn, heat for another minute. Add the lima beans, salt and pepper. Sauté until heated through. Add the brown butter and green onions. Serve.
