Candied Baby Carrots with Pineapple & Thyme

A sweet side dish to accompany pork loin.


  1. In a large pot, combine carrots and 1 teaspoon salt. Fill with water and bring to a boil. Cook for 15 minutes or to desired tenderness.
  2. Drain carrots and return to pot. Add butter, brown sugar, remaining salt and pepper. Add crushed pineapple and cook for 3-5 minutes.
  3. Chop fresh thyme and sprinkle over carrots. Serve with Bacon-Wrapped Pork Loin.
