Mini Peppermint Pancakes

With only 5 ingredients, this quick and easy, sweet holiday breakfast recipe is ready to eat in 15 minutes. Start with a pancake mix that is ready to use straight out of the box – no need for a complicated list of ingredients. Just add water to the mix and you’re ready to get these mini pancakes going!
Then, stir in the mouth-watering flavor of crushed candy cane kisses to level up the pancake batter with the richness of white crème and the crunchy coolness of peppermint candy bits.
Once the batter and candy pieces are blended thoroughly and the griddle has heated, apply a coat of cooking spray, like olive oil, while you dance in cozy socks to your favorite holiday tunes.
Using a ¼ measuring scoop, begin to carefully pour batter onto the griddle to form your mini pancakes. Make sure to leave space in between for better flipping. This is a great time to sip on some eggnog while waiting for the pancakes to cook.
Once bubbles have formed on the surface, you are ready to flip the mini pancakes. Allow them to cook for another 5 minutes or until nice and golden and cooked through.

- Heat griddle to 375˚.
- Prepare pancake mix according to package instructions. Stir in chopped candy cane kisses.
- Coat griddle with cooking spray. Using a 1/4 cup measure, scoop batter onto griddle. Cook until bubbles form on surface, flip and cook for 5 minutes or until cooked through.
- Serve pancakes with whipped topping and sprinkle crushed candy canes on top.
