Introducing our Cast Iron Cobbler, a comforting and irresistible dessert that celebrates the vibrant flavors of fresh berries and the charm of a classic cobbler. 

Juicy berries—blueberries, blackberries, strawberries and raspberries—bursting with natural sweetness and antioxidants are at the heart of this cobbler recipe. Their vibrant colors and succulent textures create a refreshing and indulgent recipe. 

Add sugar and a hint of cinnamon to enhance the berries' natural sweetness, creating a warm and aromatic base that complements the fruit's tartness. A splash of lemon juice adds a bright and tangy note, balancing the flavors and adding depth to the filling. 

Now, it’s time to whip up the topping. Combine brown sugar, flour, oats, chopped walnuts and chilled unsalted butter to create a crumbly and golden topping that's both crunchy and buttery. As it bakes in the cast iron skillet, it forms a deliciously crisp crust that contrasts beautifully with the juicy fruit filling. 

Finally, sprinkle some chopped fresh thyme over the cobbler. Its subtle flavor adds a delightful twist to the dessert, elevating it to new heights.

  1. Preheat oven to 400°.
  2. In a cast iron saucepan, over medium heat, whisk together sugar, corn starch, salt, water, cinnamon and lemon juice. Bring to a boil, reduce and cook for 2 minutes. Remove from heat and stir in berries and thyme. Reserve.
  3. In a medium bowl, mix together brown sugar, flour, oats and walnuts. Mix in butter with fingertips to resemble coarse crumbs. Crumble over berries and bake for 20 minutes or until fruit is bubbling and top is golden brown.
  4. Serve with ice cream or whipped cream.
