Blue Cheese Bombs
- Preheat oven to 400°.
- In a small saucepan, over medium-low heat, combine 1 tablespoon butter, olive oil, onion, salt and pepper. Cook for 30 minutes or until onion is dark and caramelized.
- In a food processor, add 2/3 of the blue cheese, cream cheese, thyme, rosemary, whole garlic clove and cooked onion. Pulse until smooth; reserve.
- Cut 5 biscuits into 4 equal size pieces. Roll each piece out as thin as possible. Add 1 teaspoon cheese mixture in center of each biscuit and evenly distribute remaining 1/3 blue cheese over each biscuit before rolling each into a ball. Place on a baking sheet coated with cooking spray. Bake for 5 minutes or until golden brown.
- In a small bowl, combine remaining 2 tablespoons butter, minced garlic and parsley. Heat in a microwave for 30 seconds or until melted. Brush cheese bombs with butter mixture. Serve immediately.
TIP: Refrigerate unused dough for up to 3 days for future use.
