Rum Strawberry Lime Shots
- Using a paring knife, gently cut around the inner flesh of the lime. With a spoon, scoop out the flesh into a bowl. Press the juice from the flesh. Strain the juice into a measuring cup to equal ¼ cup juice.
- In a small saucepan, heat the lime juice and rum to a simmer over low heat. Add the gelatin and stir until dissolved.
- Place the lime rinds open side up into a mini muffin pan. Pour the gelatin evenly into the rinds. Refrigerate 1 hour or until set. Slice and serve.
TIP: For extra fun, use a flavored rum; such as coconut rum!
