Kids' "Sushi" or "Tacos"

Two fun ways to dress up leftover chicken!

Directions:

  1. Prepare rice according to package instructions.
  2. In a small bowl, whisk together mayonnaise and mustard until smooth.
  3. To assemble "sushi": Place tortillas on a flat surface. Spread evenly with mayonnaise mixture. Top each tortilla with a thin layer of rice. Place strips of vegetables along the middle of the tortilla, along with half of the chicken and cheese. Roll tightly, and slice into 5 pieces. Secure with toothpicks, if desired.
  4. To assemble "tacos": Use a round biscuit cutter to cut a round shape out of each slice of bread. Flatten bread with your hands. Spread evenly with mayonnaise mixture. Fill tacos with rice, chicken, cheese, and top with vegetables. Secure with toothpicks, if desired.

1 cup Fit & Active Instant Brown Rice

1 tablespoon Burman's Mayonnaise

1 teaspoon Burman's Dijon Mustard

2 Benita Flour Tortillas or
4 slices L'oven Fresh Whole Grain White Bread

½ baby cucumber, sliced into matchsticks

¼ avocado, sliced

½ carrot, shredded

1 cooked chicken breast, chopped

2 slices Happy Farms Deli Sliced Swiss Cheese, sliced into strips
