Spinach Stuffed Chicken Scaloppini
A delectable stuffed chicken perfect for any occasion.
- Preheat oven to 400°.
- In a medium bowl, combine spinach, ½ teaspoon salt, 1 teaspoon pepper, garlic, mayonnaise, bread crumbs and hot sauce.
- Divide spinach mixture into 3 equal portions, spread over flattened chicken breasts. Fold over to seal. In a medium bowl, combine ½ teaspoon salt, ½ teaspoon pepper and flour. Dredge chicken in seasoned flour.
- In a large ovenproof sauté pan, heat oil over medium-high heat. Sauté chicken 3 minutes per side. Place pan in oven, continue cooking for 20 minutes, until internal temperature is 165°.
