Pesto Rosso Tortellini
In 15 minutes this Pesto Rosso Tortellini recipe brings together creamy cheese with garlic, red peppers and pesto sauce for a quick pasta night meal that looks like it took hours to make.
- In a medium size pot, bring water to a boil. Cook tortellini according to package instructions. Drain and place in large bowl.
- Heat olive oil over medium heat. Add red peppers and cook for 5 minutes. Add artichokes and garlic to the pan. Cook for 3 minutes or until warmed through.
- Add pesto and stir to combine, cooking 2 more minutes. Add tortellini, parmesan and heavy cream. Stir to combine.
- Garnish with fresh basil.
